Chef Joris Rousseau Serves Destination Dining at St. Regis Bali

All things culinary start to come to the fore during Fall, and we have some curated culinary experiences worth traveling for, courtesy of St. Regis!

From a Michelin-starred pop-up in Bali, Indonesia, to a chef’s residency in the Maldives, St. Regis is bringing elevated culinary travel.

The St. Regis Bali Resort (November 14–15, 2025)

This November, The St. Regis Bali Resort presents an exclusive two-night culinary collaboration at its award-winning Kayuputi restaurant. On 14-15 November 2025, Michelin-starred and Green Star-honored Chef Joris Rousseau of Feuille Hong Kong will join resident Chef Agung Adriawan to craft a degustation menu rooted in Bali’s seasonal bounty.

Guided by the Balinese philosophy of Nyegara Gunung–the balance between mountain and sea–the chefs will forage across the island to create a nature-driven, French-refined tasting experience. Set against the serene backdrop of the Indian Ocean, this rare gastronomic event invites epicurean travelers to experience haute cuisine through the lens of local terroir.

Chef Rousseau’s passion for ingredients began on his family farm, where he developed a deep respect for the seasons and the bounty of nature. He refined his skills in France’s leading kitchens, including Cheval Blanc Courchevel and Pavillon Ledoyen with Yannick Alléno, before joining Feuille in 2022.

Founded by renowned French chef David Toutain, Feuille marks Chef Rousseau’s first venture outside France. The restaurant champions sustainability with a root-to-shoot, plant-inspired tasting menu, crafted with local organic produce and elevated by French technique. Signature dishes include cumin-egg-sweet corn and the visually striking spiny lobster.


The St. Regis Maldives Vommuli Resort (October–December 2025)

The St. Regis Maldives Vommuli Resort has announced the launch of The Tastemaker Series, a new lineup of curated experiences set to debut in October.

The inaugural series begins with a Chef Jolly pop-up running through December, featuring refined interpretations of traditional Indian cuisine and select appearances by the celebrated culinary icon himself.

In November, Chef Alexander Herrmann, a two-Michelin-starred German celebrity TV chef, will showcase a distinctive blend of creativity and European culinary artistry, while December will highlight Chef Gregory Doyen, the acclaimed French pastry chef renowned for his sculptural desserts and refined craftsmanship.

Complementing the culinary residencies, the series will feature exclusive wine dinners, including a Marco Felluga Wine Dinner with Ilaria Felluga, sixth-generation winemaker and steward of the renowned Marco Felluga and Russiz Superiore estates, who will be on the island to guide guests through a curated tasting of Collio’s finest wines. Guests will also enjoy a François Labet Wine Dinner, showcasing the legacy of Burgundy’s historic Château de la Tour, where Labet, president of the estate and custodian of its legendary terroir, has upheld generations of winemaking tradition and expertise.
