Sip and Take a Sensorial Journey Through Singapore at This Cocktail Bar

As night settles, MO BAR in Singapore becomes the natural place to pause and unwind. But it’s also the perfect spot at other times of day, too.

Tucked inside the Mandarin Oriental, Singapore, is a mixologist’s delight. MO BAR, Singapore, unveils Vol. 7 Modern Localism, The City of Art, a bold new cocktail menu that shines light on Singapore’s creative landscape through 15 vivid expressions. The menu traces the rhythm of the city as it unfolds through the day, shaped by the experience of wandering through Singapore and discovering it along the way. Across this journey, it brings together 11 collaborators spanning perfumery, design, food, music and industry — chosen by the MO BAR, Singapore team for their heritage, dedication to craft, and backstories that shape how they create.

Sifr Fizz

“Modern Localism Vol. 7 isn’t about representing categories or disciplines,” said Kim Jung Hoo, Assistant Bar Manager at MO BAR, Singapore. “It reflects how we experience Singapore, starting with morning rituals, moving through the city’s cultural spaces, discovering local artisans, and eventually winding down at MO BAR. Each collaborator is someone we genuinely admire and have learned from, and every drink comes from observing how they create and live. Together, the menu becomes a collection of these moments, brought together at MO BAR.”

Rituals of Morning, Art and Design

Forest Fire

Morning begins with the rituals of preparation–scenting the skin, stepping out, and entering the city’s creative spaces. The day opens with Sifr Fizz, an aromatic Highball perfumed with Sifr Aromatic’s essential oil hydrosol, lifted with elderflower and saffron in a nod to the heritage perfumery’s origins. A visit to National Gallery Singapore follows with Forest Fire, inspired by Raden Saleh’s Boschbrand, where Monkey Shoulder Blended Whisky, Los Siete Misterios Mezcal, and pala and cengkeh (nutmeg and clove) amaro come together in a smoky, expressive serve.

Velour Kiss

A quieter interlude comes through Velour Kiss, created with homegrown skin-care brand La Dermalogique, layering gin with chamomile, bee pollen, and extra-virgin olive oil to reflect everyday self-care. Rounding out the morning is The Artis, a non-alcoholic serve created with Hans Tan Studio and shaped by founder Hans Tan’s choice to abstain, combining fermented banana tibicos, pandan, and coconut salt, with the option to add vodka for drinkers.

Kopi Pumptini

Afternoon Tea & Creative Pauses

Afternoon settles into tea-time rituals shaped by café stops and creative studios. Bukit Kemas, created with jewellery brand Forbidden Hill, channels old-world glamour through an elegantly dry mix of Ryukyu Baijiu, Lillet Blanc and roasted corn, finished with a choice of garnish for a personal touch. Coffee break follows with Kopi Pumptini, developed with Bettr Barista, spotlighting their signature blend through Kopi O, roasted barley bourbon and a hint of pumpkin in a toasty Espresso Martini variation.

Dopa? Dopa!

Dessert rounds out the afternoon with B.T.B (Bean to Bar) and Dopa? Dopa!. Brainchild of Lemuel Chocolate, B.T.B combines bourbon and cacao nibs kombucha into an earthy, effervescent pour, also available non-alcoholic, while Dopa? Dopa!, in conjunction with Dopa Dopa Creamery, delivers indulgence through salted caramel V.S.O.P., black tea and pistachio kunafa beneath a creamy crown.

After Hours, Together

Reclaimed Sling 3.0, a refined take on the Singapore Sling and a mainstay since its first iteration in 2025, returns in an evolved form, crafted with No. 3 Gin for a crisp, clean profile that feels unmistakably local. Balance follows with Jo-hwa (和諧), developed with the modern Korean restaurant ANJU, where matsutake mushroom–infused gin, fino sherry, verjuice, and pear form a fruit-forward, umami expression that bridges heritage and modernity.

Live music eases the night forward with Jukuleles, named after MO BAR’s regular band. Mezcal, yuzu marmalade, tulsi and bitters come together in a tiki-tropical highball designed for relaxed, easy drinking.

Closing the day is Pine-Dustry, a tribute to the bartenders and industry behind Singapore’s nightlife. Tequila, white wine reduction, and coconut are served with a pineapple tart–a grand finale of hospitality for those fluent in late nights behind the bar.

Anchoring the menu in established identity amid discovery are the house signatures of MO BAR, Singapore and Mandarin Oriental, Singapore:
● Mandarin Martini: A refined take on the classic, made with MO BAR Edition No.1 Gin, Noilly Prat Dry, mandarin bitters and caper berry, crisp and savoury with a citrus lift.
● M.O. Whiskey Sour: Angel’s Envy Bourbon blended with the hotel’s signature “Exceptionally Singapore” tea, lemon, sugar and meringue, finished as a soft, foamed sour with floral and citrus notes.
● Oriental Heritage: A spirit-forward rocks pour of Macallan Double Cask 12 and Hennessy XO, layered with osmanthus, devilwood and pimento dram.
