Sapphire Coast – New South Wales, Australia
New South Wales is famous for the native Sydney rock oyster, prized for their deep, sweet mineral flavor. With over 30 estuaries to choose from, follow the Sapphire Coast Oyster Trail if you can’t decide. Oyster superfans might make the journey for the annual Narooma Oyster Festival every May – the crown jewel (or should we say pearl) of oyster experiences.

For a truly unforgettable experience, leap for South Coast Seaplanes’ Exclusive Oyster Escape. Take to the skies from the picturesque Moruya River and fly along the Eurobodalla coastline before meeting with a local farmer to taste rock oysters fresh from the lease.

Rosewood Villa Magna elevates its shellfish offerings with these experiences, bridging coastal Spanish gastronomy, classic French raw bars and sophisticated cocktail pairings.
Rosewood São Paulo – São Paulo, Brazil

Guests at Rabo di Galo, the hotel’s vibrant live-music bar, can often find fresh raw oysters as a rotating special alongside signature craft cocktails, while fine-dining venue Blaise incorporates oysters into elevated French-Brazilian preparations, such as an oyster vinaigrette paired with local catch. Because offerings shift regularly with the freshest catch of the day, guests can expect an ever-evolving seafood program that highlights the finest sustainable Brazilian ocean produce.
The Shelbourne – Dublin, Ireland
Ireland’s culinary scene may be best known for its soda bread and stews, but, surrounded by the ice-cold waters of the Atlantic Ocean, it’s also home to some of the best oysters in the world, renowned for their salinity, freshness, and subtle sweetness. Welcoming guests to Dublin with warm Irish hospitality for over 200 years, The Shelbourne is the perfect hub for exploring Irish culture through its remarkably preserved architecture, proximity to historical sites, and, yes, delectable oysters.

The hotel’s signature culinary concept, The Saddle Room, known for its effortless blend of formality and modern comfort, features a dedicated Oyster Bar serving Irish oysters from nearby Carlingford, Liscannor, Dungarvan, and Galway. These beloved bivalves are available year-round, but beginning in September, The Oyster Bar will celebrate the start of Native Oyster Season with a new selection of oyster-and-drink pairings.

Native oysters are available only Sept. 1-April 30 and are often considered to have a finer taste than traditional rock oysters. When developing pairings, the culinary team at The Saddle Room sought drinks with bright acidity, invigorating freshness, or fine effervescence to enhance the naturally briny, delicate bites without overpowering them. Standouts among the eight pairings include: Tempura Oyster Truffle paired with L’Oro Royale No. 2; The Shelbourne Lawyer with a Green Spot Old Fashioned; and The Ponzu Oyster paired with The Orchard No. 4.

The Roosevelt – New Orleans, Louisiana
In New Orleans, oysters are more than a menu staple; they’re part of the city’s culinary identity. At The Roosevelt New Orleans, A Waldorf Astoria Hotel, that tradition takes center stage at the Fountain Lounge, where Executive Chef Daniel Mills and Chef de Cuisine Joseph Turley showcase Louisiana’s celebrated seafood through refined yet approachable dishes.

The Spring/Summer Menu features the impressive Fruits de Mer, an iced seafood presentation anchored by fresh-shucked oysters, while the lounge’s Oyster Night celebrates Gulf oysters with a Louisiana twist, serving them broiled with herbed butter, garlic panko, and a toasted baguette. The experience extends beyond the plate through the hotel’s partnership with the Coalition to Restore Coastal Louisiana’s Oyster Shell Recycling Program, ensuring every shell is returned to local waters to help rebuild oyster reefs and strengthen the state’s coastline for generations to come.
Montage Palmetto Bluff – Bluffton, South Carolina
In the South Carolina Lowcountry, oyster roasts are cherished cultural traditions and a cornerstone of regional heritage. At Montage Palmetto Bluff, that time-honored gathering takes center stage during the holiday season for its signature Moreland Oyster Roasts, hosted along the scenic banks of the May River at Moreland Landing. Here, the culinary team celebrates the region’s renowned seafood through an authentic, communal dining experience where fresh May River oysters are roasted over an open fire and served on long tables alongside Lowcountry favorites like Frogmore stew, slow-smoked barbecue, and seasonal fixings.
The experience extends beyond the table through a dedication to coastal conservation, ensuring shucked shells are recycled back into local waters to rebuild natural oyster reefs, protect the May River ecosystem, and preserve the Lowcountry’s maritime heritage for generations to come.
Virginia Beach, Virginia
Where the Chesapeake Bay meets the Atlantic, Virginia Beach has built its reputation on the water, nowhere more evident than in its oysters. The Lynnhaven oyster has deep Virginia Beach roots dating back to 1607, when English colonists first encountered them and reportedly included them in Captain John Smith’s earliest New World meals. By the early 1900s, the Lynnhaven was the gold standard for oysters on the half shell, prized by presidents and royalty, before overharvesting nearly wiped it out.

Today, it’s thriving thanks in part to Pleasure House Oysters, run by waterman and retired fireboat captain Chris Ludford, who has spent over a decade farming and restoring the Lynnhaven River population. Known for its balanced, sweet-briny flavor, the oyster now supplies top local restaurants like Terrapin, Commune, and Zoe’s Steak and Seafood. To up the ante, the Pleasure House Oyster Farm Tour puts guests knee-deep in the river for an interactive view of the farming process and to taste oysters plucked straight from the water, with Tasting Tour, Waterman Tour, and Chef’s Table options available for direct bookings.
Cliff House Maine – Cape Neddick, Maine
New England is synonymous with fresh oysters, and perched along Maine’s breathtaking coastal cliffs, Cliff House Maine brings the oyster experience to life. Through Cliff House Maine’s Oyster Farm Experience, guests can visit New England Superior Oysters for a private harvesting demonstration and raw bar experience set within an 85-acre oyster farm. The immersive two-hour experience offers a behind-the-scenes look at oyster farming, harvesting, and the journey from ocean to table — followed by a curated tasting of fresh local oysters.

Get creative with Oyster Shell Decoupage – Guests can take part in a hands-on workshop transforming oyster shells into beautiful keepsakes, including ornaments or delicate dishes for storing jewelry and other treasured items. The complimentary experience pays homage to one of Maine’s most iconic sea creatures while highlighting the art of upcycling.
Cliff House Maine’s signature restaurant, The Tiller, showcases the region’s incredible seafood through locally sourced ingredients, including Mere Point Oysters. Sourced from the pristine waters of Maine’s Maquoit and Middle Bays, each oyster is carefully graded by hand by this family-owned Maine farm before making its way to guests’ plates.

The open-kitchen oyster bar has become a Palm Springs staple, known for its lively atmosphere, mountain-view patio, and the chance to watch your meal come together right in front of you. This August 5, in honor of National Oyster Day, the restaurant’s oyster offerings take center stage. Oysters on the half shell, fried oysters, and their popular oyster shooters, alongside other seafood favorites like campechanas and crab enchiladas.
